Create dozens of desserts at a time with ease using this Matfer Bourgeat 385050 stainless steel 2″ chocolate tuile and disc mold kit. The kit includes a 25″ x 6 1/2″ x 3 1/4″ plate with a dozen circular cutouts and one rectangular shuttle. The shuttle fits on either end of the plate so that it does not cover any of the cutouts. Both pieces are made of durable stainless steel that will last under heavy use in your commercial kitchen, and they’re also dishwasher safe. Before use it is recommended to place the entire kit in the oven between 86 and 95 degrees Fahrenheit for a few minutes to prevent the chocolate from solidifying to quickly as it comes in contact with the stainless steel. Use it at your restaurant, bakery, or catered event to make dozens of uniform chocolate discs in no time at all.
To use, begin by laying out a “guitar” PVC sheet, or a transfer sheet (sold separately). Next, lay the plate flat against the sheet and place the shuttle at one end of the plate. Fill the shuttle with your best milk, dark, or white chocolate. Then smoothly slide the shuttle from one end of the plate to the other, and as it move, the chocolate fills the circular cutouts. Lift the entire kit and place it on the next empty patch of PVC sheet, then repeat the process. This leaves behind 1″ chocolate discs that you can serve on their own, stick them in ice cream as a creative garnish, or add another layer, like icing, for your guests to enjoy.
