Create attractive croquembouche pyramids with the Matfer Bourgeat 340463 9 1/4″ stainless steel croquembouche pastry cone mold. The mold is made from durable, stain- and corrosion-resistant stainless steel for long-lasting good looks. Additionally, it’s one piece stainless steel construction is seamless with a hollow center.
Its 9 1/4″ size is great for assembling cream puff balls into decorative croquembouche pyramids. To make a croquembouche pyramid, dip the bottom of each cream puff into caramel and attach to this stainless steel pyramid; starting at the bottom and working your way up from there. Once the cone is covered with cream puffs, wrap the entire pyramid with a spun-sugar web. To make a spun-sugar web, use 2 forks held side by side and dip the ends into caramel. Then use this to go around the pyramid in a circular motion.
