Bake beautiful and delicious bread with this Matfer Bourgeat 345836 Exoglass 11 1/4″ x 4″ x 4 1/4″ non-stick pullman bread loaf pan with lid. Featuring a natural non-stick interior coating, this mold allows your staff to easily remove yeast breads, sweet breads, and frozen desserts from the mold without damaging the edges. This allows you to skip the messy greasing of the mold while providing the same results. Plus, it has a durable construction that gives the mold a long-lasting life, even in a commercial kitchen, while not bending or warping over time.
With the lid in place, baking with a pullman pan keeps the entire bread loaf contained and prevents it from expanding freely, producing a very uniform loaf with a straight, flat top and sides and perfectly square corners. The slight constraining of the baking loaf also prevents the formation of a crown as well as bubbling, leaving a fine, tight crumb perfect for slicing. The buildup of moisture from trapped steam allows the bread to form a perfect crust for a classic and tasty slice of bread. Pullman pans are also great for baking pain de mie, a soft white or brown bread intended for slicing and which is most similar to regular sandwich bread.
This pan combines the quality of cooking in tinplate with the conveniences of non-stick. Take it right from the freezer to the oven and never worry about it losing its form! Exoglass composite material offers extra heat-resistance. Use it from -4 to 482 degrees Fahrenheit. The natural non-stick properties make for easy removal and in most cases, no greasing is necessary! However, for added flavor and color of dough, grease the mold before use.
